In Gujarat, the festival is celebrated with great zest and zeal. Uttarayan or Kite featival is large celebration in all over Gujarat.Khambhat is known for its kite making industry, special well fabricated kites that sells at above average price in market. Makar Sankranti or Uttarayan Festival Special Gujarati Recipe Surti Undhiyu

Makar Sankranti festival known as in Gujarat Uttarayan, or Kite festival.Gujarati people make Makar Sankranti special Surti Undhiyu.Here is Information about Gujarati Special Recipe Surti Undhiyu.

Ingredients

100 gms. surti papdi, stringed, whole
100 gms. raw banana chunks unpeeled
100 gms. yam chunks (kand) peeled
100 gms. sweet potato chunks
100 gms. small brinjals – slit into two
4-5 green chillies crushed
1 tsp. ginger grated
1/2 tsp. garlic crushed
1 tbsp. coriander leaves finely chopped
1 tsp. wheat flour
4 tbsp. oil
1/4 tsp. asafoetida
1/2 tsp. turmeric powder
1 tsp. ajwain
salt to taste
1/2 tbsp. sugar
lemon to taste

For Muthiya

100 gms. methi leaves finely chopped
1/2 cup gram flour (besan)
1 tsp. red chilli powder
1 tbsp. fresh ground coconut
salt to taste
1 tbsp. oil

Method

For Muthiya

Mix all the ingredients for Muthiya & make stiff dough. Form into small oval, dumplings. Heat about 1/4 th cup oil, and saute the muthias for about 2 minutes. Remove from oil and keep aside.

Directions

Form a paste of green chilli, ginger, garlic and coriander. Rub the chunky veggies(yam, raw banana, sweet potato & brinjals) with oil and chilli-masala paste. Marinate for about 30 minutes.
Heat 4 tbsp oil, then add all the chunky vegetables and stir well. Cover and cook for 4-5 minutes. Add the papdi, turmeric, gram-flour, ajwain and salt. Cover and cook on low flame till all the vegetables are almost done.
Add coriander, lemon, and sprinkle some water if required. Add sugar according to taste and mix well. Cover with a lid and let it cook for another 8-10 mins, until all veggies are cooked and the spices are blended well
Sprinkle some Sev on the top, if you wish, and serve hot with Chapatis.

Groundnut (Sing)Chikki Recipe

Ingredients

Peanuts - 250 gm.
Jaggery or Sugar – 250 gm.
Ghee – 1 1/2 Small Spoon

Method

Grease the reverse side of a plate or a counter top with some ghee.
Heat the remaining ghee in a heavy-bottomed or thick pan over a low flame. Add the jaggery. Stir and cook it till it turns into a smooth liquid (four to five minutes).
To make sure that the jaggery is completely cooked, drop a bit into a bowl of cold water.  If it solidifies instantly, it's cooked.
Take the jaggery off the heat, and add the peanut halves. Mix until all the peanuts are coated evenly.
Pour the mixture over the greased surface, and roll it out into a thickness of about 1/3 inch.
Quickly make cut marks on the chikki in the shape you want. When it cools down completely, break it into pieces and store in airtight containers.

Til Chikki Recipe

Ingredients

3/4 cup sesame seeds (til)
1/2 cup chopped jaggery (gur)
1 1/2 tsp ghee

Method 

Heat a deep non-stick pan, add the sesame seeds and dry roast on a medium flame for 5 to 6 minutes. Remove and keep aside.
Heat the ghee in the same deep non-stick pan, add the jaggery, mix well and cook on a medium flame for 3 minutes, while stirring continuously.
Switch off the flame, add the roasted sesame seeds and mix very well.
When the mixture is ready, put the entire mixture over the back of a greased thali or a smooth stone surface. Roll it out thinly into a 200 mm. (8”) diameter circle using a greased rolling pin.
Cut them square pieces using a sharp knife.
Allow it to cool completely. Once cooled, store in an air-tight container.

Mamra Ladoo Recipe


Ingredients

150 gm Mamra
250 gm Jaggery
½ tbsp Ghee

Method


Roast mamra.
Heat ghee in a pan at slow flame.
Add shredded jaggery and cook till color change and appears thick.
Add roasted mamra in it.
Mix well. Remove from flame.
Make ladoo shape from mixture.
Mamra ladoo is ready for serve.

Lohri Festival Recipes | Ganee Ki Kheer | Makke ke Roti | Kurmura Ladoo

Lohri is marked by a range of traditional exciting activities like lighting the ritualistic bonfire, dancing to the beats of dhol, singing popular folklore, flying kites and enjoying a scrumptious feast.In feast people make different types of recipes.Here is we serve some Lohri special Recipes like Makke ki Roti,Ganne Ki Khir and Kurmura Ladoo.

Ganee Ki Kheer

                                          
Ingredients
1 liter Sugarcane juice
100g of Basmati rice
Cardamom Powder
Cut Dry Fruits

Method

Wash the rice and soak it in water.
Put 1 liter of sugarcane juice in a pan and bring to boil.
Now add the soaked rice and cardamom to the sugarcane juice and let it cook on a slow fire.
Keep on stirring.
Cook till the rice and sugarcane juice form a smooth mixture.
Remove it from the flame and allow it to cool before serving.

Makke ke Roti


Ingredients 

2 cups makki ka atta (millet-maiza flour)    
Warm water for dough
1/2 tsp salt

Method
Mix the maize flour and salt in a shallow plate. Make a "Well" in the centre; add a little water at a time to knead the flour into a dough.
Divide into equal-sized balls. Put a square sheet of foil on the surface on which rotis will be made. Lightly flour the surface. Put a ball of the kneaded dough on the paper and cover with another piece of foil. Press with the ball of your palm till it becomes size of a roti. Remove the foil cover and transfer the roti to a hot skillet.
Cook on low heat, turning till both sides are roasted. Serve with butter.

Kurmura Ladoo


Ingredients

1/2 Cup roasted peanuts
1/2 lb Puffed rice(muri)
1/2 lb Jaggery(gur)
1/2 Cup dry coconut flakes
Few cardamoms(elaichi)

Methods

Take jaggery and water in a cooking pan. Boil till thick syrup is formed. 
To check the consistency, add few drops of the syrup into water. It should solidify immediately. 
Now add roasted peanuts, rice, cardamom powder and dry coconut flakes. Stir the ingredients. 
Allow the mixture to cool for few minutes. 
Smear your palms with little ghee. Roll out balls from the mixture.

Lohri or Maghi Day Festival Celebration in Different State of India

In North India, apart from Makar Sankranti known as Lohri and Maghi Day.It is a very exciting festival that is celebrated with utmost cheerfulness and grandeur. It basically marks the end of the cold winters that are colorless and depressing and welcomes the season of fruitfulness, spring and the New Year. Lohri is also celebrated.It falls on 13th January every year.Most popular in the agricultural belt of India namely, the Punjab, it has spread its wings to neighboring regions such as Haryana, Himachal Pradesh, Jammu and Delhi.Primarily a festival of Punjab, it is a harvest festival.Lohri in Punjab is celebrated by with great fervor and joy heralding the arrival of harvest season.

In the morning of  Lohri day, children go from door to door singing and demanding the Lohri loot in the from of money and eatables like til (seasame) seeds,peanuts, jaggery, or sweets like gajak, rewri, etc.They sing in praise of Dulha Bhatti, a Punjabi avtar of Robin Hood who robbed the rich to help the poor, and once helped a miserable village girl by getting her married off as if she was his own sister.The festival is long since associated with the legend of "Dulla Bhatti" a legend about a man who lived in Punjab during the time of King Akbar. He helped the poor people and saved girls from being sold as slaves and arranged their marriages. Most of the traditional songs for Lohri mention him as gratitude for what he did.


Another ritual associated with the festival sees young lads and girls going from home to home and asking for Lohri, which is some form of donation either in cash or sweets. There is a traditional dinner with Makki ki Roti  and Sarson ka Saag . Then the Prasad is distributed which comprises of six things: Til  , Gazak means dry sweet dish, Gur means jaggery, Moongphali means peanut , Phuliya and popcorn.  


The main attraction of Lohri is the huge bonfire which is lit and people gather and sing and dance around it. A number of rituals are performed by people like throwing of sesame seeds, Gur or jaggery, sugarcane sticks, Rewaris, popcorns and several other items into the fire as they dance around it.People dance to the beats of the drum or Dhol and the dance is Bhangra. It is considered to be the most exuberant and exciting dancing style and people wear the most vibrant colours to mark the occasion.

Lohri Festival is Punjab's Harvest festival.Lohri, is a festival known for its feisty celebrations among the Punjabi community.Lohri marks the culmination of winter, and is celebrated in the  January in the month of Paush or Magh, a day before Makar Sankranti. Lohri is very important for Punjabis and a bon-fire is lit, around which these people sing and dance.

Many cultural events take place and people enjoy every bit of this festival. Lohri is the harvest festival and is enthusiastically celebrated by Sikhs. It is basically the festival of Punjab and Haryana. Lohri festival in India celebrates the harvesting of rabi crops with a major ceremonial ritual of bonfire.Bonfires, an important part of Lohri festivities, was lit as several families danced to the tunes of famous festival songs like 'Sundariye Mundariye Ho', among others. Good portions of Rewri, Gajak and Peanuts were available and people were seen enjoying these popular 'Lohri' items, as they broke into interesting jigs to celebrate the festival.

During the Lohri festival, devotees take a holy dip in the holy rivers bodies in different parts of the state. The people of Jammu and Kashmir perform havans and yagnas in their homes and temples. In the rural areas, young children ask for gifts from newly wed couples, new parents and their own elders. Another feature of the Festival of Lohri in the state of Kashmir is the performance of the special Chajja dance. Young boys prepare 'chajjas' with colored paper and flowers and dance on the street, to the beats of drums. A number of traditional songs and dances further add to the festivities of Lohri.

Pongal Special Recipes| Ven Pongal Recipe|Khara Pongal|Sweet Pongal Recipe

Pongal is a four-day-long harvest festival celebrated in Tamil Nadu, which falls in the month of Thai(January-February s) when crops like rice, sugarcane, turmeric etc.During this festival women make different types recipes.Here is information about How to make Pongal Special Recipes like Ven Pongal Recipe,Khara Pongal Recipe  and Sweet Pongal Recipe.

Ven Pongal Recipe

Prep Time : 26-30 minutes
Cook time : 15-20 minutes
Serve : 4

Ingredients

1 cup Rice
1/4 cup Moong dal
1/2- 1 tsp jeera
1/2-1 tsp peppercorns
1/2 tsp pepper powdered fresh
A few Cashewnuts broken
1/2 cup dessicated Coconut
A pinch of Turmeric powder
Ghee

Method

Fry the Moongdal a little till you get a light flavour.
Mix the dal with the rice, add 2 -3 cups of water (the rice should cook very very soft)
Add turmeric powder, coconut, a few peppercorns and a 1-2 tsp of ghee to the rice and pressure cook till done.
When done, take a kadai add sufficient of Ghee to it, more the ghee better it tastes, add jeera, pepper corns and cashewnuts.
Add the cooked rice mixture, add pepper powder, salt and mix well with the ghee and jeera/cashewnuts.

Khara Pongal Recipe


Prep Time : 26-30 minutes
Cook time : 15-20 minutes
Serve : 4

Ingredients 

Rice soaked 1 cup
Moong dal soaked ½ cup
Ghee 3 tablespoons
Mustard seeds ½ teaspoon
Cumin seeds 1 teaspoon
Green chilies finely chopped 2
Curry leaves 15
Black peppercorns 8-10
Asafoetida ½ teaspoon
Cashewnuts 2 tablespoons
Salt to taste
Milk 1 cup
Fresh coriander leaves chopped for garnishing

Method

First Heat ghee in a pressure cooker. Add mustard seeds and let them splutter.
Add cumin seeds, green chillies, curry leaves, peppercorns and asafoetida. Mix well and sauté.
Add cashewnuts and stir. Add rice and green gram and stir to mix on high heat.
Heat 2 cups water in a microwave till just warm.
Add salt to cooker and mix well. Add milk and warm water, stir to mix, cover and pressure cook for 3-4 minutes after the first whistle.
Garnish with chopped coriander and serve hot.

Sweet Pongal Recipe

Ingredients  

4 tbsp ghee
1/2 cup jaggery
1/4 cup grated coconut
8 - 10 cashews
8 - 10 raisins
A pinch of salt
A pinch of cardamom powder


Method

Take a small vessel, add in jaggery, 1/2 cup of water and bring it to boil. Wait till the jaggery dissolves and switch off the stove.
Take another frying pan and add remaining 1/3rd portion of cooked daal and rice mixture. Add in jaggery syrup by filtering it using a strainer.
Add in a pinch of salt, grated coconut, mix well and bring it to boil. Reduce the flame and continue boiling.
Parallely heat ghee in a small frying pan. Fry cashews and raisins. Pour this to the boiling sweet pongal, add in cardamom powder and switch off the stove. Serve sweet pongal with khara pongal.
